Chili Cornbread Bake

It is no secret I LOVE comfort food. And comfort food varies from person to person. Chili and corn bread to me are comfort food. The fun thing is growing up, it wasn't a food we ate. My family never made it, I adapted to it over the years. James LOVES chili and cornbread. So the other night I was trying to figure out something to make for us. I remembered a Hungry Girl recipe that involved chili in the crock pot and then putting cornbread on top to make like a bake.  While I didn't have time to make the chili in the crock pot so I decided to make it like a bake. It was so simple and easy. And it was so delicious. Okay so here are the deets, but you can make it however you like. I did follow anything I just kind of winged yet, heck that's when it comes out best. First I browned 1 pound of Lean Ground Beef ( I made this another time too and use Extra Lean Ground Turkey) Then when it was brown, I added a can of Chili Beans, Corn and Diced Tomatoes, No Salt Add

Setting Up My Week for Success

Happy Monday Morning!!! It is still a dark and stormy week here in Florida. I really don't mind it all that much because it gives me excuses to get things done in my life. Like cleaning our apartment and organizing a bit. When it is gorgeous, typical Florida weather, I feel guilty when I am inside, I feel like I should be out at the pool or beach or something. It is a constant battle haha. I have a lot of those. So yesterday, my day off, I planned on cleaning and organizing my life again. It was cloudy and not a pool day, and made for an enjoyable time. I got a ton done and when I finally sat down and looked at it all, I had such a relief. I mean I could literally feel the weight of stress being lifted off of me, like Angels flying to the Heavens. Not sure why I cared that much stress around with me on it, but I did. And I have to tell you, it just set me up for success for this week. I started and finished a whole book too yesterday. Fab Find Friday & What I'm Loving

Happy Friday!!! It is a dark, gloomy and rainy Friday here in Florida. Which for work today can mean a busy day and lots of people shopping or a slow day with people avoiding the mall at all costs. Let's hope the first! Woke up in a funk this morning. Did not sleep well at all! Went to bed late because James and I were finally finishing up the whole Series of Friends! I have seen so many of them but never the whole thing so we finally ended the series. God such an iconic show and probably one of my top 10!!! I love that Netflix had it on there and you can start from where it all began and Jesus I forgot how sad the last one was.  I cried the whole thing and SHE GOT OFF THE PLANE ❤️ puffy heart moments and feels. God I loved that show then and love it even more now. So we were up late and then our neighbor decided to get very drunk and being loud, like laying on the floor in front of our door loud... Ugh apartment living has it's downfalls. Needless to say we called the cops but

I am Officially 30 Years Old

Hey Everyone!!! Oh my goodness what a freaking great Birthday I had this year. James made it so special for me. From Friday until Sunday we were celebrating. He got us a hotel room, downtown at one of, if not our favorite spot and we treated the whole weekend like it was a vacation for us and it truly felt like it was, even though we were only like 6 miles away from our house. That is the beauty of downtown, it really feels so different. We left our place Friday around noon and went to Tripps diner for lunch. B.S.T: Bacon, Spinanch & A Fried Green Tomato. When I tell you it was delicious, I am no even kidding. You Order Drinks when you are early for Check In and Hang out by the pool Brown Sugar Pina and a Craft Beer for him. I had to get it and I shared it with him :0) The weather was on and off crazy with rain, but we did not let it get us down. The pool area was fantastic. Little happy hour action.
