Weekly Weigh In: Just ehhhh

I can not believe that is Tuesday already! Another week down and we are about half way through the month, craziness. So since it is Tuesday, it means Weight Watcher meeting day and weigh in day. Again another week, I really wasn't sure what to expect due to that weird lost that just didn't seem right, 2 weeks ago. This past week, I clocked in my 11 miles and for the week, I got in about 20 miles of running, but that was about it. I didn't make it to the gym and I have stared at my weights I have laying around every day but yet to pick them up. I haven't been to the gym at all since I have started to increase my mileage. I love my running and after my long runs I am always beat and need a bit of rest for sure. And I always rest for at least 3 days during my long run training, for instance, I took Monday and Tuesday off to rest, tomorrow I am doing 11 miles again and then Thursday a true rest day, I will need it because I sure needed it last week. But I guess the point ...

Pumpkin Spice Cookies

Image
As you can guess and from previous posts I love anything and practically everything pumpkin and these cookies are the easiest to make ever. There are a lot of recipes out there for these types of cookies, using Spice Cake mix and making cake using it or cookies. I was at Aldi the other day, which by the way, my favorite grocery place lately, they are so inexpensive. I got a huge spaghetti squash for 1.40 the other, but that's a whole other story. Back to my pumpkin obsession, okay so these cookies are so simple, you can make them in less than 15 minutes and that includes baking time. What??!! haha Okay so ready to get your mind blown Pumpkin Spice Cookies (made with out oil and egg) One package of this Pumpkin Spice Cookie Mix 1 can of Libby's Pure Pumpkin 2 tablespoons of water Mix together and place 36 tablespoon size drops on baking sheet, sprayed with Pam spray. Bake at 375 for about 10-12 minutes. 1 cookie is 1pp or 2 for 3pp. Perfect for office pa...

Just A Thought...

Lately I have been seeing between my Instagram and Facebook, etc, a lot of people running Full Marathons and I am becoming more and more inspired. Marathons are all over, not so many here in Florida, mainly because of our insane weather, but Baltimore, New York, Boston and Chicago, all places I would love to visit and run! So I think the bug has been planted, I want to run a full marathon. It sounds crazy to me and gives me chills with the idea of me even entertaining this thought and typing this. Never in my wildest dreams would I consider running 26.2 miles, but I have changed and thus have my wildest dreams. And as I sit here with sore legs and feet from running 11 miles, I can only imagine what it would be like to tack on another 15 miles to that pain, but you know what it is something I want to tackle. Now I am not saying I am going to start training tomorrow or sign up for my first one in the next month, but it is something I am looking and setting an ultimate goal towards. I...

11 Miles on the 11th

Image
I haven't ran a long distance since almost 2 weeks ago, due to the stomach bug I had a week ago. This past Sunday I ran 5 miles and then took 3 days off for rest, knowing I was going to put in a long run today. The 3rd day of rest was not planned, but I woke up and was just craving a lay around in the morning before work time. I never get to just sit and have coffee and catch up on my DVR, so I decided to make that a rest day. Yesterday after work, I knew I had to get some sort of run in. So I laced up my Brooks and got out there, ended up doing 4 miles and it felt great. My pace was good, I was moving right along. It really felt satisfying afterwords. Last night my legs did hurt a bit and I slept like crap. I did watch the saddest Glee ever, I mean I sobbed the whole time during the show and I don't know it sent me into a funk. But no matter what I got up this morning and was ready to go. I made 2 slices of toast and spread Planter's Energy Mix PB on top. Drank some wa...

Chocolate Peanut Butter Banana Frozen Whoppie Pie

Image
I love anything chocolate and especially with Peanut Butter. Hungry Girl in most of her cookbooks she uses Vitatops to make her famous frozen whoppie pies. Whoppie pies are chocolate cakes sandwiches with cream as the middle. Holy yum. These though are a special low point, low calorie take on these indulgent desserts. I cant remember if this partical reciepe is in one of her cookbooks, but this was so tasty and very low in points and perfect as a dessert and crave any chocolate attack. Instead of using Vitatops, I found these at Target and they are just as good as the Vitatop, Vitamuffin Chocolate ones and actually cheaper, Bonus. Use one muffin cap and let it thaw for about 45 minutes. Or you can put in the microwave for about 15 seconds to speed up the thaw time. Once the muffin cap thaws, slice the muffin cap in half. Slice it slowly so the muffin cap doesn't fall apart. Take a banana and slice it up into 5-6 pieces, make them thin slices. In a small bow...

Weekly Weigh In: Slight Gain but Expected

It's Tuesday again, which means my weigh in day and meeting day. I actually got out of work on time this week, so I was able to attend my meeting and get there early to chat with my leader and the manager, whom I love and adore dearly. Seriously going to the meetings really make a huge difference, I know that no matter what there is always a huge support system available. Also they were handing out free Chili Lime multi crisps, which is a win because I LOVE them and I was hungry. Due to the massive, horrible stomach bug I had last week, I knew I was going to have a gain, the weight I lost last Tuesday, had a lot to do with the stomach bug. But when I got on the scale, I gained 2.2, which I was so happy to see the whole 3.6 I was down last week wasn't all due to the stomach bug, finally I was overcoming a bit of my plateau. So even though it is a gain this week, I still have a lost in there. I am not in the 140's anymore, which I hate, but it makes me want to work harder ...

Sunday in Pictures

Image
Had a great Sunday. It was relaxing, awakening, fun and busy and I got to spend the whole afternoon with James, which hardly ever happens with our schedules. We both work retail so sometimes it feels we are working complete opposite of each other. Here are some pictures from our afternoon, we went to Golfsmith and then an afternoon at The Men's Wearhouse company picnic for James. I should have taken more pictures, I really need to start documenting more. He is like a kid in a candy shop when we got to the Golf store, but I guess I am the same way when we go to Fit2Run lol. My favorite golfer is Bubba Watson and they had this head cover, I wanted James to buy it so bad. I was even going to buy it just to have. I nick names James, Bubba, after Bubba Watson, and I even said if we ever got a male dog, we would name him Watson. I also really wanted these. I would love to pick up golf, but I don't think it is something James and I should do together. I respect it...
