Hungry Girl Streusel-Topped Pumpkin Pie in a Mug

Disclaimer: I did not come up with this recipe, I got it from a cookbook, Hungry Girl 200 under 200 Just Desserts, it's an amazing cookbook, dedicated to nothing but desserts. It is filled with delicious, quick, easy and awesome desserts. I will probably post lots of them. Enjoy!! I love anything and everything pumpkin, especially because I live in Florida and I don't get to experience fall weather anymore, so I live it through food, healthy pumpkin related food. And I  am so pumped that all pumpkin stuff will be hitting the shelves soon, I decided to kick off my pumpkin love earlier. This recipe is so quick and easy. It is like having a single serving of pumpkin pie with way less calories and even less points plus. Overnight Oats: Georgia Peachblue

When I get hooked on something, I really get hooked on it, but usually it is the same thing over and over. This is why I really enjoy the overnight oats, because I can create a different one each day, plus it is so fun making different variations, its like I am creating my own menu. Yesterday's choice was Georgia Peachblue, hehe. Georgia Peachblue 1/4 cup of Old fashioned oats 1 container of Yoplait Greek 100 Peach 1/4 cup of fresh blueberries, or frozen 1 tablespoon of Unsweetened Vanilla Almondmilk This one came to 4pp! Mix yogurt, milk, and oats together. Fold in blueberries. Fill in a tightly sealed jar, bowl, or container for overnight. Enjoy the next morning. This one tasted so different and unique to me. The peaches and blueberries really mixed well and it was if it was a peach cobbler. A great start to the morning!!

Overnight Oats: Tropical Paradise

I think I am going to be eating Overnight Oats every day this week. I have just find it to be so easy and millions of possibilities. This mornings oats were inspired by where I live in Florida, Tropical Paradise. Tropical Paradise Overnight Oats 1/4 cup of Quaker Old Fashioned Oats (2pp) 1 container of Yoplait Greek Blended Coconut Yogurt (4pp) 1 tablespoon of Crushed Pineapple in its own juice (0pp) 1 tablespoon of Almondmilk 1 drop of Coconut Extract 1 medium banana 1 tsp of Chia seeds Mix all ingredients in a tightly sealed jar, then add in sliced banana. Seal jar and put in the fridge for overnight. Next morning open and sit back and relax, you have now entered paradise. Total 6pp

A New Twist on Grilled Cheese

I love comfort food. And I tend to consider a lot of items as comfort food, such as pizza, pasta, chili, tomato soup and grilled cheese. I make sure that I can still enjoy these comfort foods whenever I want, but making them in a better, more point friendly, healthier way. As you know from posts before I love and follow anything and everything Hungry Girl, in one of her cookbooks, she had a sandwich section and grilled cheese was a topic of many pages, plus she had many emails sent out about the glorious, ooey gooey sandwich. BWW, or better know as Before Weight Watchers, I used to make my grilled smothered in butter, with at least 4 pieces of cheese and on whole wheat bread. Yes, I would be the person to order a large fry, double cheese burger and a Diet Coke, like it was really going to make a difference, so me making my old grilled cheese on wheat rather than white, I felt like I was eating better, HA!! Slimming Down and Saving on Starbucks: Iced Chai Latte Edition

Sunday I posted about finding my Green Tea Iced Latte and slimming it down, well while I was there I also picked up an Sugar Free Chai Latte concentrate also. I follow Undressed Skeleton as a blogger and she posted this recipe a while back. I pinned it to my pinterest but forgot about it or just didn't have the right ingredients for it. Now I finally did!! The serving size of the concentrate is 1/2 for 0pp. I used a full cup, which was also 0pp. I wanted a larger drink, think Venti. Mix the concentrate with 1 cup of Blue Diamond Unsweetened Vanilla Almondmilk (1pp) and pour over ice. Quick, easy and oh so tasty. You would never believe you made it at home OR the fact the whole drink is 1pp!! If you make it has a half cup or grande, it is still 1pp. I like more for my buck, so I make it double. Amazing!! The concentrate cost about 3.59 and the Almondmilk ran me about 2.00. Which just the two items alone cost the same amount as one drink at Starbucks. Now  I am not hating ...

Overnight Oats: Strawberry Lemonade

Couple of days ago I posted about overnight oats and how much of a genius idea they were, well I ate the PB and Chocolate one and I agree, they are fantastic. I never thought I would enjoy cold oatmeal, but it is so good! So quick and easy and quite filling. I have paired them with a side of fresh fruit because it bulks up my breakfast experience. I was inspired to make another oats this week and I know I will keep doing this every week. The next one I made I just ate this morning, I call this one Strawberry Lemonade. Strawberry Lemonade Overnight Oats 1/4 cup of Quaker Old Fashioned Oats (uncooked)-2pp 1 container of Yoplait Greek 100 Calories Lemon Yogurt-2pp 1 tablespoon of Blue Diamond Unsweetened Vanilla Almondmilk-0pp 4 medium cut up Strawberries-0pp Total: 4pp Mix all together in a tightly sealed container or jar. Leave in fridge overnight. Dive in the morning and Enjoy!!

Weekly Weigh In: A Gain but A Win

This past week has been a hard one, I wasn't on vacation, but a family member was down and it was as if I was on vacation with them. We ate out every night, which I was very happy about because we made awesome choices and got to indulge in restaurants that we never get out too. My BF and I eat in at least 6 days of the week, so to be able to go out and enjoy someone else cooking for me, is more than a treat, its pure heaven. I know the correct way to eat for sure. I have this healthy eating down to a science at times, but sometimes I forget or stir away and just enjoy. But this week I did really good, I thought, I mean I did forget to say dressing on the side with my Chicken Cesar Salad, I did steal some chips from the bag that came as a side with my Crab Cake Sandwich, I did enjoy the whole serving of Chicken Pad Thai, and I did have an extra couple of pieces of bread in the beginning of two meals.
