Last Two Days and A Fab Find

The last two days have been tough for me to get some exercise in, life of course is getting in the way. On Thursday I planned to make it a rest day because I did 9 miles on Wednesday, so that was pre-planned. And as a fun rest day, I worked and then went to the Redskins vs. Bucs game with my love. He is a huge Redskins fan, he is fun the Maryland/DC area and Skinies are very near and dear to him. They don't play the Bucs, only once like every two years, and we went to one last year, when they were in town. So its still preseason and they were in town, so OF COURSE, we went. It was a great time. I am not a huge football fan, I prefer baseball, but it is slowly coming around to me. I love the excitement and passion my boyfriend gets from it, so I join right in.



I planned my meals for the day, knowing we would be eating at the game. I planned I was going to have a hot dog with bun, 8pp. I made sure I ate one of my Questbars before the game, and brought to the game with me a bag of grapes, carrots and a light Babybel Cheese circle. I plan to not fail with things like this. I of course drank a diet coke, a beer would have been nice and I could of had it, but they are so expensive and I would much rather use it on other things. I have no shame in my game with bringing in healthy options. This stadium had nothing good and I am a snacky, muncher person, so I have to make sure I have something on hand at all times.


Friday I planned to get a run in our something, well I was exhausted. I just couldn't get out of bed, my body was sore and I was just drained. So I slept in and then had to rush to work to do an 11 hour day. So as much as I would have loved a run, I mean really loved it, life just got in the way. Today, I planned I was going to run in the morning and then do this new Jillian Michaels DVD I bought at Best Buy. Well of course, I get up this morning, ready to run and outside it is a hurricane, monsoon rainstorm. I mean really!!!! And I will not run on a treadmill. It is just not something I like to do, I have tried, I really have and I am much more of a road runner.

I didn't want to miss out on doing nothing, so I pulled out the DVD and gave it a try. I love it!! It has two workouts. I decided to try out the first workout and make my way to the second, like the DVD suggested. I have never really tried yoga, or a yoga DVD. I am a little out of my comfort zone, I am not flexible at all. But like Jillian said in the DVD, you have to make yourself uncomfortable to be comfortable. So I threw on my shorts and sports bra, which I never work out in by itself. I moved out of my comfort zone. I really loved the DVD, I can feel it in my core now. And I was working up a sweat for sure. My back was drenched in it. I think I will use this in conjunction with my running, it wasn't too intense, it was intense but not enough to knock me off my feet. So one days, I do 3-4 miles, do this with it. I need to crank it up and put my body in shock mood and this is a great way too.



If your looking for a new way to workout, for rainy days, like mine or just try something new, this DVD is great. Most of the Biggest Loser type DVDs are really great for this. Hope everyone is having a nice weekend. I am working today and then buying new running shoes tomorrow, YAY!!!

A couple of things I thought about while running this morning..




Today I am off from work and considering it is a day off and I work the rest of the week, I needed to get a long run in. Last Friday I did 8 miles, so I pushed it up to 9 miles today, I'll stay at this 9 mile long run training for about 3 weeks. It was sort of a tough one today. I haven't ran that long since April, and I know I only just did 8 four days ago, that extra mile sure does make a huge difference. I set my alarm for 5 am, but I ended up hitting snooze for a 1/2 hour more, I could barely see my phone at 5:00. Started the run at at 6:48 and took me 1:41:51 to complete the 9 miles.  Back in January, when I started to train hard for my first Half Marathon, I did 8.17 miles in 1:37, so what an improvement.

I am extremely happy to see how far I have come with my running, and I say this time and time again, it is not about the pace for me, I do have a pace I would like to be in mind, but it is about getting out there and putting miles on my shoes which is more important. My pace was 11:18 today. I started off slow, my head was taking over, rather than my heart. I think I was a bit sleepy, but waiting to run later is not an option. It is too darn hot!!!

While I was running, my mind is all over the place and I think of tons of things, so this is a couple of the things I thought about today:

1. I have lived in St. Pete for 4 years now and didn't realize I have so much more areas to explore and run.
2. Downtown is my favorite place to run!!!! So many different streets, things to look at and the view is spectacular.
3. I absolutely love where I live. Running by the bay, while the sun is coming up, is probably the most religious and spiritual experiences I will ever encounter.
4. I think a lot about my dad and how I wish I could just pick up the phone and call him.
5. I think A LOT about work and how I can coach, learn and train better. Plus what I have to accomplish on my to-do list.
6. I learn while running, I think a lot about food. I think about what I will have to eat after my run when I get home and how many points I will use.
7. While running through the USFSP campus today, I thought how much I loved going to College and how if I was younger again, the different things I would do over again.
8. I thought about when I lived downtown, how crazy I was to not take advantage of all the awesomeness it had and sad I was so lazy and unhealthy then.
9. I thought about my fuel belt and how it was driving my CRAZY lately. It actually broke today, well not the belt, the water bottle fell out and broke right at the cap, so I had to dump the water and run with just one. I took really small sips.
10. How much I love Lemon Lime NUUN mixed with salt!! Crazy I know but it tasted so much like Gatorade and it really, really helped today!!

See my mind is constantly going when I am running. The music drowns a lot of it but running really helps me have a clear understanding and it gives me a release.

Fab Finds: Weight Watchers & Big Lots Products

A couple of call outs on these 4 pretty awesome products. The Weight Watchers one are new items at my Weight Watcher store location, a Sweet Hazelnut Latte mix and a Roasted Almond Sensation mini bar, 2pp each. The latte I am very excited about trying, thinking about mixing in with my coffee, or making a coffee smoothie out of it. The Planters Nutrition I have been wanting to try forever, but it was always so expensive and didn't see worth the price. It is very high in points for my liking, for 2 tablespoons it is 5pp. I plan on using 1 tablespoon which is only 3pp. And I am using int on my light bread tomorrow morning before my 9 mile run for some extra energy. The Fiber One 90 Calorie Lemon Bars are AHHHAMMZING!!! I love these bars. I picked them up because you get 38 of them for 6.00! Great deal. I seriously love Big Lots for reasons like this, I can find and try items without breaking the wallet and get things I love for the same scenario. If you don't have a weight watchers store near you, try emailing the company, they might be able to work something out for you!!

Weekly Weigh In: Attack of the Snack Monster

Once again I had no clue what was going to happen at this weigh in today. I swear every week it is a hit or a miss, and well this week was a miss. I earned about 33 activity points this week and ate them all. It was attack of the snack monster this week. I was extremely snacky!!! I don't know where it came from or why, I was just very hungry all the time. And I go for the right items, apples, grapes, fruit, veggies, but man, sometimes I just want something else, so all my 2-3 point snacks were looking so good and my almonds were on point. I live up to my weight gain this week of 1.4. I know its silly, that isn't much of a gain, but you know what it is a still a gain and it takes a blow to the self-esteem at times, especially, when you know you work so hard. I have been up and down for what seems like forever now, my body will just not go beyond this 151 pound mark.



 It wants to stay this way forever, BUT what my mind wants, isn't what my heart wants. And the heart always wins. So I continue to fight, I continue to move on, I pick myself up, I track, I run and I use my points. I will not let the fact I am yo-yoing so much get me down, it is a hill, and fight now I am stuck on the side, but let me tell you when I get over this hill, I am flying down!!!

Overnight Oats: Peachy Keen Caramel Dream

My obsession with overnight oats continues to grow, I literally cant stop. They are pure genius and so easy, and work so well in my life. I love LOVE the fact in the morning I can take and extra 5 minutes or more to not have to cook breakfast, it is all ready for me. Granted I would sometimes just grab a yogurt, but this is so much more than yogurt and way more filling. PLUS, my creativity is in overdrive. I love the idea I can just throw a bunch of stuff into my Mason Jar and its done and over with. More will be coming for sure! Enjoy!

Ingredients


1/4 cup of Old Fashioned Oats (uncooked) 2pp
1 Pineapple Greek Yogurt ( I got mine from Aldi, Chobani would work just fine) 4pp
1/2 of a medium Peach, cut into pieces-0pp
1/4 cup of Raspberries-0pp
1 tablespoon of Blue Diamond Unsweetened Almondmilk Vanilla-0pp
1 tablespoon Chia Seeds-1pp
1 tablespoon of Walden Farms Caramel syrup-0pp

Directions

Mix everything together in your tightly sealed jar, bowl, container. I have been saving my peanut butter jars for the future, hehe.

Put in the fridge for overnight and in the morning enjoy!!

Motivational Monday: Running Success

This is one of my favorite running quotes of all time. And it stands so true in my life and I think in any one's life. When I am running a race, a half marathon, training or a fun run, it isn't about the race itself, its about me and what I am doing in my life this exact moment it is happening. Running puts such a clear perspective in my life, at the beginning of my run, I am running with my mind, clearing it, the second part of my run, miles 6-9 I am running with the beat, the music, the energy and the idea of it all, then the final miles, I am running with my heart, mind, body and soul. And at the end of the run, I have such a clear understanding of my time, run and life, and my life was made to run!!

Put on your shoes, grab your water bottle and get out there and see how wonderful your life really is, or better yet, how wonderful your life could be
and is on its way to being!!

Pinterest Inspired Chicken Philly

I am sure if your on Pinterest you have seen the Philly Cheese steak healthy version, where you use a green pepper, deli roast beef and Swiss cheese. They look awesome and have heard from people who have tried they are even better than they look. See now the only problem is I really wanted to try that today, but I didn't have Swiss cheese, nor the roast beef. I only had this huge green pepper I bought the other day, with no idea what I was going to make it out of.

I then remembered in my late night, first moving down here to Florida days, my boyfriend and I would get these amazing, Chicken Philly Sandwiches, from this adorable late night eats, Angie's Cafe. I know how perfect of a name hehe. Well they were too die for, so I figured, I will change the idea and make it with chicken.

Ingredients

1 Large Green Pepper
2 wedges of Laughing Cow Light Creamy Swiss
3 oz of Fully Cooked Chicken

Directions

Cut the green pepper and half and lay it open. Take your chicken, I used Tyson Grilled and Read, Fully Cooked Refrigerator Chicken, because it is quick and easy, I used whatever the serving size was, which was 3 oz. I divided the chicken into the pepper halves. Some of the pepper fell off, so that is why there is a mini one too. I took my Laughing Cow wedge and broke in half one, for the small one and then took a whole one and put on top of the chicken on the big one.



I put the green peppers in my little toaster oven on to broil and baked for about 10 minutes. The cheese wasn't melting so I took out the peppers, they were baked and tender, just how I wanted it. I put them in the microwave and let the cheese melt for about 1.5 minutes. When done, I mixed the cheese around the chicken, let cool for maybe 3 minutes, they looked so good I didn't care if I burnt my tongue and dove in.



They were delicious! I would recommend for yours and what I will do next time, is warm up the cheese first before putting in oven, that way it is creamy and toss in some onions too. But for a first try, it was win and only 4 plus points!!!

Saturday Savings

To have a Saturday off it really is a gift. I love my job a whole lot, but I envy those that get to have Saturday's off, there is just something about having a weekend off. I have been lucky this weekend to have yesterday, today and tomorrow off. It is rare in retail to be able to have something like this, so its like a vacation for me. Yesterday was my long run day, followed by house cleaning, today was my gym morning and coupon shopping and ended with a perfect dinner and a movie with my love and tomorrow is a morning run and then being half lazy and doing laundry all day. Great weekend off, but next time I really need some beach time I think.

Since I am off I get to wear color!! At work our dress code is black, white or gray, so when it is a day off I splash myself with some bright. Loving the combo today of my attire. And loving how my body is looking and feeling. Confidence is really showing through.



Today I planned to use some coupons I had burning in my pocket and on my phone. As much as I dislike going to the mall on my day off, I knew I wanted to take advantage of some savings. I like to believe I am a pretty good bargain shopper and I rarely buy anything full price. I carry a coupon book with me at all times, I have SnipSnap on my phone and various other coupon apps, I save coupons I received from other transactions, so on and so forth.

I planned today to venture to Bath and Body Works, Victoria's Secret, GNC and Plato's Closet for coupons I had.

Bath and Body Works, I picked up two candles, which I am a die hard Yankee Candle girl but Bath and Body Works sometimes has a better deal so I cheat every now and again, like today. There 3 wick candles were on sale for 2 for 22 and I had a 20 % off coupon, which brought them down to 18.00 for the 2. Then I picked up a Pumpkin hand sanitizer for work that was 5.50 and I got it for 4.80 with my other 20 % off coupon. Bath and Body Works are great with coupons. Take the survey one they give. 10 off of 30 is great and they never expire, which is perfect for Christmas, or I like to stock up on candles with them! Hoping the sale is still next week, I can use some more and use my coupon.
I picked Pumpkin of course, I guess I am missing home a bit. They both smell great!! The candles burn very nicely. Kept the Pumpkin Cupcake in the kitchen and Blueberry Pumpkin in the living room.



Victoria's Secret was next. I had received in the mail 4 free panty coupons, not knowing if I could use all 4 in one transaction or not, I gave it a chance. Sure enough I could, so I got 4 pairs of underwear for free. I get double because I always give our house phone number when they ask and always give my email and such. Hey it pays off, and if its free it is for me.



GNC was next. My mall sent me a coupon for a free Quest Bar and a BOGO free Lean Shake coupon. I have tried their Lean Shake powder before but never the shakes in a bottle, so I was all over these coupons. I love Questbars!!! Also before going in I searched on SnipSnap for more GNC coupons and found a 10.00 off of 20.00 coupon, my favorite. I stocked up on my 2 favorite Questbars, White Chocolate Raspberry and Chocolate Chip Cookie Dough, which were also Buy 3 Get One Free. My whole transaction came to 13.84!!! I got 3 free Questbars and a free shake, big score!! And they say eating healthy is expensive.



Before I left the mall to go to Plato's Closet, I swung by Chick Fil A. The one in our mall gives out coupon discount cards to mall employees, it spotlights a different item each month that you can get for free. August was a free 8 piece nugget meal. I thought why the heck not, I am not always a big Chick Fil A fan, I don't share the same views as them, but I have realized it is the company, not the people who work at the restaurant themselves and our is extremely nice. So I got my free 8 piece and took it home. I put it over a bed of salad, drizzled some Hot Sauce and Fat Free Blue Cheese and had homemade Buffalo Chicken Salad for free!! The nuggets are only 7 points too, not bad at all! And they are super yummy.

Plato's Closet is outside of the mall and one of my favorite places to shop. They are a consignment type of store, where they sell gently used name brand clothing and you can sell the same of your own. I use them quite frequently because it is great place to get inexpensive clothes and since I am always changing sizes, it is great way to not have to spend a lot, plus I sell back the ones I grow out of. I have a punch card with them and had earned 20 % off an item. I found a Black Nike Workout Dry Fit shirt for 6.00, got it for 4.80 with discount, cant beat that. Then the other two purple shirts were on clearance, which meant take an additional 50% off. One was 2.00 and the other 3.50 after discount. We can wear purple at work this month! Everything came to 11.00! LOVE IT.

Then I capped off my awesome day off with a dinner to Pollo Tropical and a movie, The Butler with my love. The Butler was an amazing movie!!! Truly fantastic, heart warming and I cried, I cry at everything. And I had awesome company.



Best Saturday in a long time! Hope everyone had a great one too!!!






Getting in my long runs

When training for a half marathon I try really, really hard to stick to a plan from Runners World magazine, but with my schedule for work and demands, it is sometimes impossible for me to accomplish. But just because I cant follow theirs doesn't mean I cant make my own. My plan is to do at least 2 gym days, where I do a long cardio session with some weights on one and then the other time, just a lite walk on the treadmill and the remainder lifting weights, focusing on full body. The other 3 days, I run.

One of the days is my long run, where right now I am up to 8 miles. The other two days are a 3-4 miler and at least a 4-5 miler. Now some weeks I can accomplish all of this and other weeks I can not, but I make sure that no matter what I dedicate my long run once a week. I will make the time for that one. Yesterday I put in my 8 miles. I haven't ran 8 miles since April when I did Iron Girl. I will do this 8 miles until the first week of September.

The first 2-3 weeks of September the long run will be 9. The last week of Sept-Oct week 2 will be 10. Then each week after will increase by one mile. Two weeks before I will do 13 and the week before I will do just light runs 3-4 miles and increase my strength. Life gets in the way sometimes, but it is all about how you handle it and manage it. I don't like making excuses, so I will find away to get the long ones in. Even if it means I have to do it on a day at work at 1, when I could sleep in, Ill be up at 5 to get it over with.

This week I put in 8 and it really did feel great. My IT issue didn't bother me at all. My legs were sore and stiff because I did an intense at home workout DVD, but other than that they were moving right where I liked them too. I started off strong with a 10:29 pace, which I was happy about, then around mile 3-5 I slowed down a bit, then at 6-8 I increased and pulled out a 11:01 mile. I am not out there to run fast, I am out there to just get the miles and get it done. Maybe down the road I will work on the pace, right now I am just improving me!! I had a Questbar before I ran, and used my fuel belt for water with NUUN. Well my fuel belt and I are not on very good speaking terms. The darn thing would not stay up, it kept bouncing and falling off, literally it flew off and another time I dropped one of my water bottles. Not sure what is going on, I didn't have this problem last week. I am running tomorrow and using it and hoping for change.

At mile 6 I took some Sports Beans, fruit punch flavors and pushed through. I didn't want to bring GU because it is so hot, the flavor and warmth do not sit well with my stomach. It was a gorgeous morning and even a little breeze. It was well worth getting up, getting it done and kicking my weekend off great!!

Fab Find: Aldi Fit & Active 14 Calorie Bars

If you live near an Aldi, stop everything and go to one now!! I am a big fan of the grocery chain.  They are very inexpensive, they have some named brand stuff, and carry this line called Fit & Active that has a lot of low calorie, fat free, reduced fat, Weight Watchers friendly products. A lot of the line mimics name brand items, just with their brand on it, and for practically half the price, you can not go wrong.

Some things I have learned with Aldi is you will not always get the same item again. So if you love something be willing to wait it out and keep checking back in with them to see if it will pop up again. Or stock up the next day and different Aldi's will carry different items at times. Bring your own bags and boxes, they do not bag for you. To use a cart, bring a quarter, it holds the cart for you, its to keep the parking lots clear of carts, I do believe. They don't accept coupons and just check the produce when you purchase, just to make sure there aren't any spots, etc.

I check out Aldi every now and again and yesterday I went in to do some grocery shopping. While filling my cart, I found this awesome item. Since it is still summer, ice pops are a great cool treat. These are 14 calories, SCORE!!! One bar is ZERO POINT PLUS!!!!! You can up to 4 for 1 Point!! 4, wow!!! There are 3 flavors, cherry, orange and raspberry and each of them are swirled with vanilla ice cream. The flavor as the taste like Italian Ice. They are really good!! I enjoyed the cherry one and it was a perfect treat for zero points.

20 Things About Me

I saw on Instagram a post where you write 20 things about yourself and then tag someone or 20 other people to do the same. I thought it would be fun to do something like that on here, since I am sure a lot of my readers are people who I already know and probably know me pretty well, whom I love and adore for reading my blog, there might be people reading who know nothing about me. I tried to think of some 20 random things, but I am pretty much an open book, have always been, I don't mind telling my story, so a lot of these you might already know. But this is all fun and games and you get to know a little bit more about me!!

1. I love anything that sparkles, has glitter and is pink.
2. I am an only child and I never wanted my parents to give me a brother or sister.
3. Music and running are my therapy, even though I have no idea what a real therapist would do for me, I have never been.
4. Christmas is my favorite holiday!! I start before Thanksgiving and extend it to Valentine's Day. Due to the fact I work in retail and I want to maximize it as much as I can.
5. I love to read but hardly can it seems these days, BUT when I do, I dive right in and don't put it down. It takes me awhile to get back in once I get away.
6. I'm obsessed with celebrity gossip, trash magazines and anything that relates to that nature, I even wrote my whole Senior Project about the obsession we have about it for my senior college essay.
7. I love when couples on TV date in real life.
8. I believe you can have more than one soul mate. They just might come in different forms or variations at certain times of our lives.
9. When I joined Weight Watchers I wasn't doing it for me, I was joining to be a support system to my friend. I never thought I was going to dive right in and find my second chance at life.
10. I have no desire to have kids and never really have. I like kids but I don't want to be a parent, its not something I can see myself becoming or doing. I would like to have two dogs instead, one named Molly and another named Watson. I would be content with just that.
11. Tortilla chips and Salsa are my biggest weakness. I have a hard time saying no or staying away when they are out.
12. New York will always  be considered my home.
13. I wake up between the hours of 3-4 and every night since I lost my father last year. I make myself believe that it is his way of saying he is here with me. He died in his sleep so we have no clue when he took his last breath, what he may have said, was thinking or how it happened. I believe this is the hour he died and that is why I wake up.
14. My Poppy, my father's father, is my heart and the biggest influence on and in my life. I would never be the person I am today if he didn't take me when I was 12, he saved me.
15. I have about 8-10 people, who aren't immediate family I can count on in my life to be there for me whenever I need them. 4 of them are friends I have had since I was in grade school and I think that is the most amazing fact ever.
16. My mother is the bravest person I know and I never tell her that enough or how much I truly respect her.
17. My boyfriend is my backbone and supports me in no matter what I do. We have known each other 10 years, met in college, had been on and off for 3 years and officially together for 4.
18. I am constantly happy, positive and optimistic. I think it sickens people, but I will never be any other way.
19. I will never give up Diet Coke, I have an emotional attachment to it.
20. I'm intrigued by anyone or anything that deals with addiction to alcohol and drugs, I have the concept of wanting to save them.

There ya go, a little more of who I am!!!

Current Running Playlist

On Monday I had posted I wanted to write a post about motivational music and well as we know I overslept. And the rest of the week got away from me. I haven't been able to work out as much or run at all this week, my legs are little itching to run. I am excited to go to sleep so I can run in the morning, craziness I know. The weather has been crappy, work has been long, stressful and forever, but I am off this whole weekend, THE WHOLE WEEKEND!! WOOHOO! And I am dedicating my free time to running, working out, cleaning and pool, I would like to the say the beach but usually by the time I get there, it rains and I have to carry everything and pack back up. Oh and getting in lots of relaxation and naps! I love to nap.

Okay now that I have gotten way off track, my run tomorrow I am hoping to do 8 miles. I haven't ran all this week yet, last time I got in a long mile was last Sunday, the 11th, when I did 7. So I am shooting for 7, but really pushing myself to 8! Running that length of time, I usually use Pandora because its random and I keep just going and tend to find some really good tracks, but I download this free music app and I can download tracks to make my run customized to me. Also some really good apps are Rock My Run, FITradio, and Pandora, I use those also to just switch things up.

I downloaded some of my favorite songs and songs I knew would push me along during the longer miles. I find music really pushes me along and takes the other thoughts, stress and distractions out of my mind. Some of these songs are very random, try not to judge too much, this is my taste and it is what works for me. Oh and I am a total Glee fan, so a lot of my music is Glee versions, hey its my escape.

Hungry Girl's Pan Fried Chicken Parm

Travel day with work and since I had some major windshield time I of course think about nothing other than food. I knew we had chicken and I had some Fiber One, I know that sounds like the craziest combination ever, but in Hungry Girl land, Fiber One is a staple when wanting something that is fried. And I knew I wanted Chicken Parm of some sort. I had made this recipe before and it was so good and even easier and the bonus I had everything at all already, so no need to stop at the grocery store. Made the chicken parm and paired it with Knorr Tomato Parm Noodles and a side of Broccoli with Tomatoes. Chicken Parm was 7pp and the noodles were 4pp and the meal 100% delicious!! Even boyfriend approved.

This makes 2 servings.

Ingredients

1/2 cup Fiber One Bran cereal
1 1/2 tsp Italian seasoning, or more to taste
1/8 tsp salt, or more to taste
1/2 tsp garlic powder, or more to taste
1/2 tsp onion powder, or more to taste
1/4 cup canned tomato sauce with Italian seasonings
1/4 cup fat-free liquid egg substitute (Egg Beaters)
2 (4 oz) raw boneless, skinless chicken breast cutlets, pounded to 1/2-inch thickness
1/2 cup shredded part-skim mozzarella cheese
Optional seasoning: black pepper

Directions 

In a blender or food processor, grind cereal into crumbs. Transfer to a wide bowl and mix in Italian seasoning, salt, 1/4 teaspoon garlic powder, and 1/4 teaspoon onion powder.

In a small bowl, mix tomato sauce with remaining 1/4 teaspoon garlic powder and remaining 1/4 teaspoon onion powder.

Place egg substitute in another wide bowl. One at a time, using tongs, coat chicken cutlets with egg, I used my fingers, not shame in playing with my food, shake to remove excess, and coat with crumbs. 

Bring an extra-large skillet sprayed with nonstick spray to medium-high heat. Lay coated cutlets in the skillet and cook for about 4 minutes per side, until chicken is cooked through.

Evenly spread sauce over chicken cutlets, still in the skillet. Sprinkle with mozzarella cheese.

Reduce heat to low and cover skillet. Cook until cheese has melted, 2 to 3 minutes. Enjoy!

Overnight Oats: Chocolate Cherry Cordial

I think besides the fact I am really loving these overnight oats, creating them and naming them are even more fun for me! I am being creative and finding different items to mix together to really make something delicious and then coming up with a cute catch name has been super fun. Haha. This mornings overnight oats are brought to you by cherries and chocolate, YUM!! One of my favorite candies of all time are those chocolates with the cherry and liquid inside, when you bite it, the liquid drips all out and the cherry has just that right amount of bite, and the chocolate is rich and creamy. Oh god how I love those candies, so my oats this morning were inspired by those liquid cherry gods!!

Chocolate Cherry Cordial

1/4 cup of Old Fashioned Oats (uncooked)-2pp
1 container of Yoplait 100 Greek Black Cherry Yogurt-2pp
1 Tablespoon of Chocolate Whey Protein Powder-1pp
1 Teaspoon of Mini Semi Sweet Milk Chocolate Chips-1pp

6pp total



Mix all ingredients together in jar, or bowl of choice. Seal lid tightly, put in fridge for overnight.

In the morning stir up the goodness, grab your spoon and drive right in! The chocolate chips give it a perfect little crunch you might crave in the morning and the extra protein powder makes for a much more filling breakfast!

Weekly Weigh In: Every Little Bit Helps

Tuesday has come around yet again, which means my Weight Watchers meeting and weigh in day. I have to admit as much as I dread the scale sometimes, I love the idea of hoping on there and finding out how my week is. I mean when I first started I could sense if it was going to be a good week or a bad week, most of the time I was happy to see it go down, or said it to go up just a little bit, and at times just shocked, either I had a huge increase, like that bizarre 4 pounds I had a while back or when I got on once and lost 5 pounds and had no clue how it happened.

Well today was one of those days! First before we all get excited thinking I lost 5 pounds, stop because that is not the case, haha, I truly wish. But when I got to WW today I really had no clue what direction this weigh in was going to be going. I had a decent week, it was sort of a weird week for me. I have been going non stop with work, no days off and longer hours, so my life has been a little crazy. I have been trying to fit in my work outs running around that, making good meals and really trying to not eat out. I wish I got more running in this past week, but I guess my body was telling me it will be okay.

I had to work this morning, so I knew I was going to weigh in tonight at my meeting not in the morning like I had the last couple of mornings. I love my Tuesday meetings but waiting all day to weigh in, kills me at times. I know I can eat whatever, but subconsciously I think I cant drink or eat a lot because it will add on those extra pounds, crazy I know. So I ate light today and made it to my meeting on time. And to my awesome surprise when I weighed in I was down 1.2.

Woohoo!! I love LOVE watching that number go down. Even if it is a surprise I still get such a satisfaction and I know that this journey I am on is just where I need to be. I am weighing a weight number I never ever knew I could be, I mean I haven't weighed this low or looked this great ever, I am sure I did in Middle School but I don't ever remember feeling this great.

So no matter the surprise, how I got there or what got me there, I am just happy to be here! I am happy to continue to lose, I have a goal in mind and Every Little Bit Helps and gets me there!

One pound or One Point Two this time at A Time!!

Motivational Monday: Overslept


This morning I planned I was going to get up and get going. I was going to cook a really great breakfast, well it was going to be a waffle with some turkey sausage, sit down with coffee and write a great blog post about Monday motivation and the impact of music. Well, as you can see the time stamp it is now 10:43 pm and I am now just getting to my computer. I overslept this morning, I just kept hitting that glorious snooze button, actually it was more me just resetting the time over and over. By the time I finally got up, I had to kick it into overdrive and get ready for work. I didn't even get to sit down and enjoy my breakfast. I cooked a bagel and spread it with some Earth Balance Peanut Coconut Spread and grabbed my coffee to go.

Why is is some morning I get up with such gazelle intensity and others I can barely make it out of the bed without throwing myself off the bed onto the floor to wake up.



So my whole Motivational Monday, wasn't very motivational. But regardless I did have a decent day. After work, I literally raced home to get into my running gear, I wanted to run no matter what. But like all things on this glorious Monday, as I put on my gear the lightening and thunder and rain came. So without thinking or anything else, I drove myself to the gym and got on the Cross Trainer and pushed out 45 minutes. I wanted to make sure I didn't walk back in my house because I couldn't run and give up. I forced myself, I became my own motivation. And you know what it felt pretty great!

So regardless of my Monday not being how I orginally wanted it to be, I made it the best it could be. And my motivational music post, oh that is coming soon don't you worry!!

Subscription Boxes: Love With Food Edition

As I have stated most likely before I have a slight new found love for subscription boxes, I think they are pure genius and tons of fun. I love seeing those little boxes sitting outside my door when I get home, I get all giddy and childlike. I literally bust through the door and unwrap and tear open those boxes like I am a kid on Christmas morning, which by the way, is the exact same way I am on Christmas morning, what can I say I love presents. And what better present then a box full of awesome new food to try! Bonus!!!



On Facebook there was a deal with Love With Food box, sign up and get your first box free, or just try the box for free. I figured why the heck not. I wasn't ready to spend another 10.00 a month, if I wasn't sure what it was. The reviews looked good and the website showed some pretty awesome products they have done in the past, so I signed up. The neat thing I thought was it said, will this be just one time thing, cancel after you receive your first box or make it a monthly subscription. I said cancel after because I already signed up for Runnerbox, Bulu Box and BeStowed! I know I have a slight problem, haha. I love mail!! The mail lady even said to me "Oh your the one who gets all those little boxes"! I laughed and smiled big, "Yup that's me"

So I signed up for Love with Food and it only cost me $2.00, for shipping, I am totally okay with that. I received the box yesterday and it is awesome!!!! Placed in all read box, with Love with Food on the front, I tore right in. 8 gourmet styled items with inside, all different flavors and kinds. Snappea Crips, Bops Chips, Pralines, Salsa cup, Mints, Almond Snacks, Dizzy powder and Rip Van Wafels. Which that Rip Van Wafel made me smile because I come from the land of Rip Van Winkle, Woot Woot :0)!!



I was very impressed and surprised at the sizes and variety. Inside the box is a description of each item, where they are from and where you can purchase them through their website. I need over the Snappea Crisps, I had purchased them from Whole Foods last month, everything else was new to me and I was very excited about that. If there is one thing I have learned is always try something new to keep you on track.

Due to the fact I live in Florida having items sent to you that are food related is sometimes a downfall, they tend to melt! So the praline was looking very small and melted, so I figured I might as well put it out of its misery and eat the poor guy. I didn't even look up the points, I know, I know, bit, lick, nibble, track everything. Hey, I have a slip up every now and again, plus I know I ate it, I am not trying to hide it. The praline was too die for!! It was delicious and sweet and gooey. Pure heaven. They are made out in New Orleans and I am very tempted to go to Aunt Sally's just to get one more.  I mean it was amazing!

The last praline I ate was a sugar free one from Russell Stovers for 2pp, haha, this was way more than that. I didn't try anything else in the box yet, I had to control myself because I probably could have. I put them in the kitchen in a bowl where every day I could grab one, COUNT THE POINTS, and try something new.

If your interested in subscriptions boxes, I think they are a great and inexpensive way to try new products and see what else is out there. You can order the products sampled online and most of the time they give you coupons to use or discount codes. There are tons out there to choose from, I did Love With Food because it was cheap to try, PLUS, when you purchase a box with them, they donate a meal to a family in need, how AWESOME is that!!!

Comfort Food: Macaroni and Cheese

Not sure what it is lately but I have been wanting macaroni and cheese! On my Instagram a girl posted a picture of a box of Annie's Macaroni and Cheese and mixing it with a 1/2 cup of Greek Yogurt, rather than using milk and butter. I thought that was pure genius!! And I cant wait to try it, but tonight I really wanted macaroni and cheese after work, I just didn't want to go and pick up a box. So I racked my brain how I was going to make this work, then it hit me.

I had read in an old Hungry Girl book or email that mixing Green Giant Just For One Broccoli and Cheese Tray with whole grain elbow pasta makes for a great low calorie and low point mac and cheese. I was stoked because I had everything at home already!

So I cooked up some Barilla Whole Grain Elbow macaroni. Measured out 7 oz, about 1 1/2 cups (7pp) then I cooked the broccoli and cheese tray.

Broccoli & Cheese Sauce (4 trays, 17 oz.)


I mixed the broccoli and cheese tray into my pasta and then I tossed in a Weight Watchers Jalapeno Cheese wedge ( you can use any cheese wedge you like, ww, laughing cow, store brand, all work great), mixed everything up, broke up the cheese wedge and then put everything in the microwave for 1 minute, to make the wedge a little bit more creamy.



Then mixed until it was creamy and gooey. Put some pepper on top and Done. It was perfect, not too cheesy, just enough creaminess and the broccoli gave it a great flavor. The pasta was perfect and filling. Whole total meal was 9pp!! Perfect for over a cup. I will be doing this again and I love how guilt free it is!


13 weeks to Women's Running Series Half Marathon St. Pete



Well I am doing it again and can not wait. I signed up 2 weeks ago for my 4 half marathon. Hold on, lets just sit back and reflect on that sentence there for a minute, MY FOURTH HALF MARATHON!! AHHH!!! WOOHOO!!! It still amazes me that I have found the courage, strength and determination to run these races, I mean 13.1 miles is a lot of miles, but god do I love it.

So the Women's Running Series is coming to town in November, November 24 to be exact. And a little FYI Women's Running is an awesome magazine, geared towards women and running, umm pretty fantastic. I get a lot of my tips and tricks from the magazine and the cover is usually a pretty radtastic lady, giving great tips of on running, health and life. Pick up a magazine and subscribe.

 Anywho, I signed up and got a pretty great deal from it. When I signed up they offered 10.00 off the price AND a 25.00 gift card to Fit2Run, which happens to be my go to store for my running shoes and other running goodies. Well I am in the need of new running shoes anyway, and even if I wasn't, you cant have too many pairs. So I jumped at this awesome deal and signed up.



So this week began my training, well I don't stick much to a training plan per say, I try too, but I usually don't get to do the tempo or hill runs, I do try to tie in strength training, and a long run on the weekends and then my smaller runs through out the week. And tie in a rest day here or there. This race though I am really going to try to stick to a rhythm and plan, probably starting in September. My work life is cooko bananas at times, so I just try to work what I can, and believe me I make sure to get my running in.

This week was not a great week. I did get my long run in on Sunday, 7 miles, which was fantastic. Ran with my friend Stacey, 7 miles went by so quickly, couldn't even believe, caught the sun rise over the bay, had great conversation and pace, AND my leg and IT band did not bother me at all. That was great, so I think with all my foam rolling and strengthening, it might be really helping.

Monday I used as a rest day because I did an overnight at work and was feeling all wacky all day, and after a long run, I like to take a rest day. Tuesday, I walked to and from the gym with my bff Jacke, we worked out at the gym, tried in machines, haha, was that a sight, some machine where you kneel and pull up, felt great, but we looked hysterical doing it! Wednesday, I became part of the 5 am club with Jacke, lol, we did a very early work out and I have to say as much as I disliked getting up early, it was good. I felt great through out the whole day and had energy, but when I got home from work, I passed out, but a good tired.

Thursday, I ran 2 miles, it was tough, I did it after work, I was feeling tired and lethargic, but I got some mileage, I wanted to go for 3 but I just wasn't having it. Friday, I used a rest day, I was beat and I woke up with a sore throat, more like scratchy and a huge knot in my leg that wouldn't go away. I have learned to listen to your body, so I rested, slept in and took my time. And today, Saturday, I got up and ran 3.13 miles and it was tough. I went out at 9:30, thinking it shouldn't be all that bad. Started the run and I was feeling good, there was a small, and I mean small breeze, but it felt okay, then probably about 5 minutes in, it started to hit me. My feet started to feel like bricks and the heat kicked in, I felt like my legs weighed 800 pounds and all I felt was hot, like steam coming off of me.

I fought through it but at times I literally felt like I was on fire. I remember thinking god when is it ever going to cool down. I got the 3 miles in and I was dripping in sweat, my headband, my arms, my ears, everything covered. I had to pace back and forth to get my barrings straight, the heat and humidty were no joke. I think I need to either get up real early or wait till later to get some runs in. But I am stubborn and I know myself and I wont and continue to put myself through hell, haha!

So week 13 was good, not great, but I did get my activity in. Tomorrow starts week 12 I and I have a plan mapped out. Let's see if I can stick to it! Rest on Sunday and Tuesday, long run Friday (8miles), 3-4 miles Monday, Thursday. Wednesday and Saturday gym!

Hungry Girl Streusel-Topped Pumpkin Pie in a Mug

Disclaimer: I did not come up with this recipe, I got it from a cookbook, Hungry Girl 200 under 200 Just Desserts, it's an amazing cookbook, dedicated to nothing but desserts. It is filled with delicious, quick, easy and awesome desserts. I will probably post lots of them. Enjoy!!

I love anything and everything pumpkin, especially because I live in Florida and I don't get to experience fall weather anymore, so I live it through food, healthy pumpkin related food. And I  am so pumped that all pumpkin stuff will be hitting the shelves soon, I decided to kick off my pumpkin love earlier. This recipe is so quick and easy. It is like having a single serving of pumpkin pie with way less calories and even less points plus.

Streusel-Topped Pumpkin Pie in a Mug

Ingredients

1 tablespoon Jell-O Sugar Free Fat Free Vanilla Instant Pudding Mix
2/3 cup canned pure pumpkin (not pumpkin pie filling)
1/8 teaspoon pumpkin pie spice
1 no-calorie sweetener packet (I use Splenda)
2 1/2 teaspoons brown sugar (not packed)
1/8 teaspoon plus 1 dash cinnamon
1 tablespoon old-fashioned oats
1 teaspoon whole-wheat flour
1/2 teaspoon light whipped butter or light buttery spread
Dash of Salt

Put pudding in a mug. Add 2 tablespoons of cold water and mix until mostly smooth and slightly thickened. Add pumpkin, pie spice, sweetener, 1/2 teaspoon, brown sugar, and 1/8 teaspoon cinnamon. Mix all together.
Cover and put in fridge until chilled, roughly about 30 minutes.



In another bowl, combine oats, flour, butter, salt, 2 teaspoons of brown sugar, and a dash of cinnamon. Mash and stir until well mixed and crumbly. Microwave for 30 seconds, or until firm.




Stir the crumble, breaking it up into pieces and sprinkle over pumpkin mixture.



Squirt some Fat Free Reddi Whip on top, grab your spoon and indulge!

Overnight Oats: Georgia Peachblue

When I get hooked on something, I really get hooked on it, but usually it is the same thing over and over. This is why I really enjoy the overnight oats, because I can create a different one each day, plus it is so fun making different variations, its like I am creating my own menu. Yesterday's choice was Georgia Peachblue, hehe.

Georgia Peachblue

1/4 cup of Old fashioned oats
1 container of Yoplait Greek 100 Peach
1/4 cup of fresh blueberries, or frozen
1 tablespoon of Unsweetened Vanilla Almondmilk




This one came to 4pp!

Mix yogurt, milk, and oats together. Fold in blueberries. Fill in a tightly sealed jar, bowl, or container for overnight. Enjoy the next morning.

This one tasted so different and unique to me. The peaches and blueberries really mixed well and it was if it was a peach cobbler.

A great start to the morning!!

Overnight Oats: Tropical Paradise

I think I am going to be eating Overnight Oats every day this week. I have just find it to be so easy and millions of possibilities. This mornings oats were inspired by where I live in Florida, Tropical Paradise.

Tropical Paradise Overnight Oats




1/4 cup of Quaker Old Fashioned Oats (2pp)
1 container of Yoplait Greek Blended Coconut Yogurt (4pp)
1 tablespoon of Crushed Pineapple in its own juice (0pp)
1 tablespoon of Almondmilk
1 drop of Coconut Extract
1 medium banana
1 tsp of Chia seeds

Mix all ingredients in a tightly sealed jar, then add in sliced banana. Seal jar and put in the fridge for overnight.

Next morning open and sit back and relax, you have now entered paradise.
